做(zuò )法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火(huǒ )。煮(zhǔ )到水快熬(áo )干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
