做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮开(kāi )后转中(zhōng )火。煮到水(shuǐ )快熬干的(de )时候加(jiā )入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
