做(zuò )法:春(chūn )笋切成片后加(jiā )少许盐(yán )捞出后(hòu )用清(qīng )水浸泡(pào ),生(shēng )姜切片,葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒(chǎo )均(jun1 )匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
