做法:春(chūn )笋(sǔn )切成片(piàn )后加少许盐(yán )捞(lāo )出后用清水浸(jìn )泡(pào ),生(shēng )姜切片(piàn ),葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
