做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖大火(huǒ )煮(zhǔ )开(kāi )后转中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
