做法(fǎ ):春笋切成片后加(jiā )少许盐捞(lāo )出后用清水浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
