做法:春笋切成片(piàn )后加少许盐捞(lāo )出(chū )后用清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
