做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖(gài )大(dà )火煮开后(hòu )转中(zhōng )火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍(shāo )收汁(zhī )时盖上锅盖焖(mèn )。
