做法:春笋切成(chéng )片后加少许盐捞(lāo )出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱(cōng )段翻(fān )炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝(háo )油翻(fān )炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
