做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖(gài )大(dà )火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的(de )时候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上(shàng )锅盖(gài )焖。
