做法:春笋切成片后加少许盐捞出(chū )后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干(gàn )的时候加入(rù )盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖(mèn )。
