做法:春笋切成片(piàn )后加少许盐(yán )捞出(chū )后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬(áo )干(gàn )的(de )时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
