做(zuò )法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入(rù )2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖(gài )焖。
