做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清水浸泡,生姜切片,葱切(qiē )成(chéng )段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转(zhuǎn )中火(huǒ )。煮(zhǔ )到水快熬干的时(shí )候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖(gài )焖。
