做法:春笋切成片后(hòu )加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均(jun1 )匀稍收(shōu )汁(zhī )时(shí )盖上锅(guō )盖(gài )焖。
