做(zuò )法:春笋(sǔn )切成片后(hòu )加少(shǎo )许(xǔ )盐(yán )捞出后(hòu )用(yòng )清(qīng )水浸(jìn )泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮(zhǔ )开后(hòu )转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
