做法(fǎ ):春笋切成(chéng )片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮(zhǔ )开后转(zhuǎn )中火。煮(zhǔ )到(dào )水快(kuài )熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
