做法:春笋切成片后加(jiā )少许(xǔ )盐捞出后用(yòng )清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入(rù )生抽(chōu )、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
