做法:春笋切(qiē )成(chéng )片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖(gài )大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀(yún )稍收汁时(shí )盖上锅盖焖(mèn )。
