做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段(duàn )翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量(liàng )清水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
