做法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转中火(huǒ )。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻(fān )炒均(jun1 )匀稍收汁时盖(gài )上锅(guō )盖焖。
