做法:春(chūn )笋切(qiē )成(chéng )片后加少许(xǔ )盐捞出(chū )后用(yòng )清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
