做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少(shǎo )量(liàng )清水半掩(yǎn )住(zhù )春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
