做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜(jiāng )、春笋(sǔn )、牛肉片、葱(cōng )段翻炒(chǎo )1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火(huǒ )煮开后转(zhuǎn )中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
