做法:春笋切(qiē )成片后加少(shǎo )许(xǔ )盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
