做法:春笋切成片后加少许盐捞出(chū )后用(yòng )清水(shuǐ )浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮(zhǔ )到水(shuǐ )快熬干(gàn )的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。
