做法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住(zhù )春笋(sǔn ),盖上锅盖大(dà )火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
