做法:春笋切成片后加少许(xǔ )盐捞出(chū )后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火(huǒ )。煮到水(shuǐ )快(kuài )熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖(mèn )。
