做法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋(sǔn ),盖上锅(guō )盖大(dà )火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
