做法:春笋切成片后加少许(xǔ )盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再(zài )加(jiā )入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
