做法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡(pào ),生姜切片,葱切(qiē )成段。锅(guō )烧热(rè ),倒入2勺油(yóu ),放(fàng )入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的(de )时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
