做法(fǎ ):春笋切成片(piàn )后加少(shǎo )许盐(yán )捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁时(shí )盖上锅盖焖。
