做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮(zhǔ )到水快熬(áo )干(gàn )的(de )时候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
