做法:春笋切成(chéng )片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右(yòu )。再加(jiā )入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖(gài )大火(huǒ )煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
