做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖大火(huǒ )煮开(kāi )后转中(zhōng )火。煮到水(shuǐ )快熬干的时(shí )候(hòu )加(jiā )入盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
