做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成(chéng )段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
