做法:春笋切成片后加少许盐捞(lāo )出(chū )后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅(guō )盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
