做法:春笋切成片后(hòu )加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入(rù )2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少(shǎo )量清水半(bàn )掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
