做法:春笋切成片后加少许盐捞出(chū )后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快(kuài )熬干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
