做法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
