做法:春笋切成片后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春笋,盖上锅盖(gài )大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时(shí )候加入(rù )盐,翻(fān )炒均(jun1 )匀(yún )稍收(shōu )汁时盖上锅盖焖。
