做法:春(chūn )笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后(hòu )转中(zhōng )火(huǒ )。煮(zhǔ )到水快熬干(gàn )的时(shí )候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
