做(zuò )法:春笋(sǔn )切成片(piàn )后(hòu )加少许盐捞出后用清水(shuǐ )浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍(shāo )收(shōu )汁时(shí )盖上锅盖焖。
