做法:春笋切成片后加(jiā )少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖(gài )大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
