做法:春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均(jun1 )匀,加入少量清水(shuǐ )半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
