做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒(chǎo )均匀(yún ),加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
