做法(fǎ ):春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀(yún ),加(jiā )入少量清水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
