做法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开(kāi )后转中(zhōng )火。煮(zhǔ )到水快熬干的时(shí )候加入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
