做法(fǎ ):春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱(cōng )切成(chéng )段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半(bàn )掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖(mèn )。
