做法:春笋(sǔn )切成片后加(jiā )少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水(shuǐ )半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快(kuài )熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
